This is my go-to recipe for a sweet treat right now. These cookies come together fast, in one bowl, and are amazing. A soft, chewy chocolate cookie with a just the right amount of mint. Yum. Everyone I make these for asks for the recipe, so here it is!
I first made these after my husband came home from a church meeting and talked about the cookies he had there for days. So I called the baker, who happens to be my mentor, Bible Study leader, and friend and begged for the recipe. I didn’t really have to beg, she kinda laughed because these are really the simplest things. Ode to you, Mrs. Dawn! These little cookies are amazing!
Mrs. Dawn’s Grasshoppers
1 box devil’s food cake mix (she uses Duncan Hines)
1/2 cup oil
1 box Ande’s mints (28 mints)
Preheat your oven to 350. Mix the cake mix, eggs, and oil together until completely incorporated. Meanwhile, have some little helpers unwrap the mints for you. Roll the dough into tablespoon size balls and place on a cookie sheet. If you work really hard you can get 28 balls from the mixture to match your 28 mints, or if you need to pay your helpers, 24 mints. Bake the cookies for 7 minutes or until they start to look dry on top. Remove from oven but keep on the cookie sheet. Place a mint on top of each cookie and wait a bit for them to melt, them spread the mint around with the back of a spoon to coat the top of the cookie in the melted minty chocolate.
Remove from the cookie sheet and let sit until the candy coating has hardened, if you can bear it.
Now I have to put in a disclaimer. I say these are the easiest cookie ever, and they are. Just be sure you follow these instructions and not the instructions on the back of the cake mix. Unless you want minty pancakes, then follow the directions on the back of the box. Ask my sister-in-law if you want that recipe :)
