Maui Wowi Pizza

Several years ago when it was just the Dude, Monkey, and I we took a trip to New Mexico to visit family for Christmas. While there, the Dude and I took advantage of the extra help and got away for a night for the first time since we had become parents. We loved being parents from the very beginning, rocking a screaming newborn from six at night until two in the morning every night was our hearts’ delight. Ha. Let’s just say, after Monkey was weaned we needed a break, and as it happened we had just found out Bear was on his way. So we really needed a break. The Dude is pretty big on surprises, especially when it comes to weekend getaways. For this trip he chose Durango, CO. No skiing though, just a night in a quaint little inn, shopping, a movie, and walks up and down Main Street. It was perfect. The Dude and his friends were into brewing beer…in our basement… at the time, so we hit up every brewery in Durango looking for cool beer glasses and good food. When we travel, the Dude is characteristically more adventurous in what he orders at restaurants. We went to one brewery and he ordered a pizza that sounded, well, not like a pizza I would ever try. But oh my, it was so delicious! And we have made it at home several times since, most recently on Superbowl Sunday. The boys and their friends thouroughly enjoyed make-your-own pizza night.

I highly recommend it if you are looking to kill an evening and don’t mind a wrecked kitchen! The topping choices spanned from plain cheese to meatlovers to the works, but if you’re feeling brave, here is your pizza.

Maui Wowi Pizza

For the pizza dough I follow the instructions on the back of Fleischmann’s Pizza Crust Yeast.

You will need

1-3/4 to 2-1/4 cups all-purpose flour

1 envelope Fleischmann’s pizza crust yeast

1-1/2 teaspoon sugar

3/4 teaspoon salt

2/3 cup very warm water

3 tablespoons oil

Preheat oven to 425°. Combine one cup of flour, yeast, sugar, and salt in a large bowl. {I use my kitchen mixer, just warm the metal bowl under hot water for a few seconds so it doesn’t cool your warm water down too much and kill the yeast.} Add water and mix for about a minute.

Add the flour gradually, 1/2 cup at a time until a soft dough ball is formed {or until the dough is clinging to the dough hook on your mixer.} Knead until smooth and elastic, about 4 minutes.

Roll dough out on a floured surface and transfer to your greased pizza pan, or cookie sheet, or pizza stone. Whatever you have.

This is where I change things up. The Dude and I like our pizza crispy. If you are the same way, prebake your pizza crust for half of the total baking time. In this case, 6 to 7-1/2 minutes. Remove the hot pizza crust from the oven, pop any bubbles, and carefully spread on the toppings.

The toppings:

1/2 cup melted butter

1/3 cup brown sugar

4 oz grated mozzarella

1 can pineapple tidbits, drained

Canadian bacon

jalapeno peppers

Combine the butter and brown sugar to make a sweet sauce, spread evenly and liberally on the prebaked crust. 

Add half of the cheese. 

Top with pineapple, bacon, and peppers.

Cover with remaining cheese. Pop back into the oven for 6 to 7-1/2 minutes, until the cheese is melted and bubbly.

If you are the Dude, you will enjoy this with a cold pale ale.

But it’s just as good with Diet Coke. Now go make yourself some pizza!
